ORANGE - PEPPER STEAKS 
4 beef tenderloin steaks, 1 inch thick
2 tsp. coarsely ground black pepper
1/2 c. orange marmalade
4 tsp. cider vinegar
1/2 tsp. ground ginger

Press pepper evenly on both sides of steaks. Place on rack of broiler approximately 2 to 3 inches from heat. Combine marmalade, vinegar and ginger. Brush top of steaks with half of marmalade mix. Broil 10 to 15 minutes, turning once. Brush remaining marmalade mixture.
