PEANUT BUTTER COOKIES WITH CHICK
PEA FLOUR
 
1 cup chick pea flour
1/2 sugar
2/3 cup brown sugar
1/4 cup butter, room temp
1/4 tsp salt
1 egg
1 1/2 cups of smooth or crunchy peanut butter

Preheat oven to 350°F.

Cream butter, both sugars, peanut butter and egg until smooth, add chick pea flour and salt. Mix until blended, spoon onto a greased cookie sheet and press down with a fork.

Bake in a 350°F oven until the edges are golden brown.
