MOM'S IRISH POTATO CAKES 
1 c. mashed potatoes (cold leftovers are best)
3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 - 1/2 c. milk to make paste

Mix first 4 ingredients; add enough milk to make a thick paste. Roll out on floured cloth to 1/4 inch thick. Cut into squares; fry in moderately deep fat until golden.
