IRISH APPLE COFFEE CAKE 
1 c. corn oil
2 c. white sugar
2 eggs
1 tsp. vanilla
2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
4 c. apples, diced
1 c. nuts, chopped
1/3 c. butterscotch morsels

Cream oil, sugar, eggs and vanilla until fluffy. Sift together dry ingredients, add to other mixture and mix well. Add apples and nuts. Pour into a 9 x 13 inch pan, lightly greased on bottom only. Sprinkle the butterscotch chips on top. Bake 60 minutes at 350 degrees. Serve hot or cold, or with a sauce or whipped topping.
