BEEF STICK SAUSAGE 
5 lbs. ground chuck
5 tsp. Tender Quick salt
2 1/2 tbsp. mustard seed
2 1/2 tbsp. garlic salt
2 tsp. peppercorns
2 tsp. hickory smoke salt
2 tsp. lemon pepper

Mix all ingredients by hand. Cover and refrigerate. For next 3 days, mix well each day. Recover and refrigerate. Day 4, mix well. Shape into rolls. Cook in broiler pan at 150 degrees for 8-10 hours. Can be frozen.
