CHOCOLATE MOUSSE 
1/4 c. sugar
4 tbsp. rum
4 oz. semi - sweet chocolate
3 tbsp. heavy cream
2 egg whites, beaten stiff
1 c. heavy cream, whipped
Whipped cream and shaved chocolate for garnish

Cook sugar and rum over low heat until sugar dissolves. Set aside. Melt chocolate in a heavy sauce pan. Stir in 3 tablespoons heavy cream. Add the rum syrup to the chocolate, blending well. Cool. Fold in egg whites and chocolate mixture into the whipped cream. Pour the mousse into a serving dish or individual dessert cups. Chill. Serve garnished with additional whipped cream and shaved chocolate. Yields 8 servings.
