LAYER PEACH PUDDING 
1 1/2 c. sifted cake flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
3/4 c. sugar
1/2 tsp. grated lemon rind
1/2 tsp. almond extract
2 eggs
2 c. canned sliced peaches
1/4 tsp. cinnamon
Chopped nuts (optional)

Sift flour and measure. Sift again with baking powder and salt. Cream shortening, 1/2 cup sugar, lemon rind and extract; add eggs, one at a time, beating after each addition. Add sifted dry ingredients, stirring only until blended. Pour half the batter into greased 8 x 8 x 2 inch pan; cover with peaches and top with remaining batter.

Combine 1/4 cup sugar with cinnamon and sprinkle over top with nuts. Bake in 350 degree oven for 40 minutes. Cut into squares and serve plain or with cream or ice cream.
