ENGLISH PEA CASSEROLE 
1 can English peas, drained
1 sm. jar pimento
2/3 c. grated mild Cheddar cheese
2/3 pkg. Ritz crackers
1 can cream of mushroom soup
1 onion, finely chopped
1 can chopped water chestnuts
2/3 stick butter

Mix all ingredients, pour into casserole dish. Bake at 400 degrees for 20 minutes. Mix 2/3 package Ritz crackers, crushed, with 2/3 stick butter. Sprinkle on top. Return to oven and brown. Watch carefully while browning.
