POTATO CHEESE PIE 
3 lbs. potatoes
3 tbsp. butter
1/2 c. milk
1/2 c. grated Parmesan or Romano cheese
2 eggs, beaten
Salt and pepper to taste
Bread crumbs
Mozzarella cheese, thinly sliced
Also add slices of ham, sausage or salami as desired

Preheat oven to 375 degrees. Boil potatoes in jackets until tender. Peel and mash or force through a ricer. Add butter, milk, grated cheese, eggs, salt and pepper. Beat until creamy and light. Butter an 8 inch pie plate and sprinkle with bread crumbs. Arrange half of the mashed potatoes in a layer in prepared pie plate, cover completely with Mozzarella slices, then if you wish add a layer of whatever meat you wish, and top with remaining mashed potatoes. Sprinkle with bread crumbs and dot with butter. Bake until top is golden brown and crusty.
