GOOD COCONUT CAKE 
1 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 egg yolks
1/4 c. soft butter
1/4 c. shortening
2 c. & 2 tbsp. sugar
1 tsp. vanilla
3/4 c. sweet milk

Makes 2 (8 inch) layers. Bake for 25-30 minutes at 350 degrees. Top with Beat Neat Frosting.

BEAT NEAT FROSTING:

2 egg whites, unbeaten
3/4 c. sugar
1/4 tsp. cream of tartar
1 tsp. vanilla
1/4 c. boiling water
1 c. coconut

Mix egg whites, sugar and cream of tartar in a small deep bowl. Add boiling water, beat to stiff peaks. Spread between layers and on top. Sprinkle with coconut between layers and on top. Store cake uncovered until cool.
