STUFFED BARBECUE BRISKET 
1 brisket (8 to 10 lbs.), trimmed
1 lg. Italian dressing
1 lg. onion, chopped
1 head garlic, chopped
Salt, black pepper, cayenne and garlic powder to taste

Open pocket in brisket from the thin side. Mix onions and garlic together and season with salt and pepper. Fill the pocket in the brisket with the onion and garlic. Pour the Italian dressing. Place in covered roast pan overnight.

Next day grill brisket for 1 hour on each side. Return brisket to roasting pan; pour a bottle of barbecue sauce and cover. Bake at 275 degrees for 3 hours.
