SQUASH CASSEROLE 
1 1/2 lbs. squash
1 sm. jar pimento
2 sm. onions, chopped
1 can cream of chicken soup
4 sm. carrots, grated
1 c. sour cream
1 pkg. Pepperidge Farm stuffing mix
1 stick butter, melted

Cook squash in salted water. Drain and mash. Mix first 6 ingredients and 1/2 package of stuffing mix. Line large shallow casserole with remaining stuffing mix that has been mixed with 1 stick butter, reserving a little for topping. Fill with squash mixture. Bake at 350 degrees for 30 minutes.
