SQUASH CASSEROLE 
3/4 stick butter
1 1/2 c. bread crumbs
1 lg. onion, chopped
1/2 c. bell pepper, chopped
1/2 c. red pepper or pimento, chopped
3 c. cooked and mashed squash
3 beaten eggs
2 tbsp. sugar
1 tsp. salt
Black pepper
1 c. canned milk
1 c. diced or grated cheese

Big baking dish - melt butter at 350 degrees. Take 1/2 cup bread crumbs out. stir rest of bread crumbs in butter. Saute chopped onions and peppers in butter or oil until limp. Mix with bread crumbs in casserole along with eggs, sugar, salt, pepper, milk, and squash.

Cover with rest of bread crumbs. Bake 1 hour at 350 degrees. Remove from oven and cover with cheese; place back in oven to melt cheese.
