FLOUNDER AMANDINE 
3 tbsp. sliced almonds
2 tbsp. butter
2 tbsp. lemon juice
2 (8 oz.) flounder fillets
1 tbsp. chopped fresh parsley

1. Place almonds and butter in a 12 x 8 x 2 inch baking dish.

2. Microwave at high 6 minutes or until almonds are lightly toasted, stirring at 2 minute intervals. Stir in lemon juice.

3. Place fillets over almonds and cover tightly with plastic wrap; fold back a small corner of wrap for steam to escape.

4. Microwave at high 6-8 minutes or until fish flakes easily with a fork, giving dish a half turn after 4 minutes.

5. Transfer fish to serving platter, drizzle almonds and butter over top. Garnish with parsley. Yield 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
