CAJUN MEATLOAF 
1 tbsp. butter
1 med. onion, chopped
1/2 c. chopped celery
1/2 c. chopped green bell pepper
2 cloves garlic, minced
3 slices firm white bread
1/3 c. milk
1 1/2 lbs. ground beef round or chuck
1/2 lb. ground veal or pork
1 egg, beaten
1 tsp. ground cumin
1/2 tsp. cayenne pepper
1 tsp. salt
1 tbsp. Worcestershire sauce
2 tbsp. ketchup

Heat oven to 350 degrees. In a small frying pan melt butter; add onion, celery, green pepper and garlic. Cook until wilted. In a small bowl soak bread in milk and break into crumbs. In a large bowl place meats, vegetables mixture, bread with milk and remaining ingredients. Mix well and shape into a loaf. Place loaf in shallow pan, bake one hour; serve. Makes 6 servings.
