LIME PICKLES | |
1 gal. cucumbers 2 c. hydrated lime 2 gal. water 2 tsp. salt 2 tsp. whole mixing pickling spice 1 tsp. whole cloves 1 tsp. whole celery seed 1 tsp. whole mustard seed 2 qts. white vinegar 10 c. white sugar 1st day: 1 gallon of cucumbers, cut in bite sizes. 2 cups hydrated lime, 2 gallons water. Mix and put in a crock pot. Let stand for 24 hours. Stir every 2 hours or so. 2nd day: Take out of lime and wash until clear. Let stand in clear water for 3 hours. Drain and return to crock. Put the following in a container and bring to a boil, salt, pickling spice, cloves, celery seed, mustard seed, vinegar and sugar. 3rd day: Let set overnight. Next day, simmer for 35 minutes. Put in pint jars. Makes 8 or 9 pints. |
