LIME PICKLES | |
1 gallon of sliced cucumbers 2 c. household lime Mix lime with enough water to cover cucumber slices. Then soak overnight in the lime water. Drain and rinse in cold water. Soak in cold water for 3 hours. Soak in syrup for 6 hours and boil for 40 minutes. SYRUP: 8 c. white sugar (5 lbs.) 9 c. white distilled vinegar 2 tbsp. pickling spices 1 tsp. celery seed 1 tsp. salt (do not use iodized salt) NOTE: Pickling spices and celery seed can be wrapped in cheese cloth and cooked in syrup mixture if you don't want the spices in the syrup when canned. After boiling for 40 minutes, put pickles in sterilized jar and add hot syrup. Either heat jars first, or put knife in jar as syrup is added to keep jar from cracking. Seal with sealing tops and rings. |
