FRIED GREEN PLANTAINS | |
Unripe plantains (1 per person) Pure Spanish olive oil salt to taste Choose a plantain with yellow-green or all-green peel that is hard to the touch. Remove peel and slice in about 1 inch perpendicular slices. If it is too difficult to remove the peel, first cut off the ends and then make 4 end-to-end cuts through the peel only and gently lift and roll off the peel. Heat oil in sauté pan to medium-high. Place plantain slices, cut side down, in oil and cook 1 minute on each side until pieces are slightly soft but not brown. Remove slices and press individually between two pieces of clean brown paper until they are lightly browned. Salt to taste. Serve instead of bread. |
