CRANBERRY NUT LOAF 
3 c. all-purpose flour
2 eggs
3 tsp. baking powder
1 1/4 c. milk
3/4 tsp. baking soda
1 tbsp. grated orange rind
1 tsp. salt
1/2 c. chopped nuts
1/2 c. shortening
1 c. whole fresh cranberries

Sift together flour, baking powder, salt, soda and sugar. Cut in shortening until mixture resembles cornmeal.

In another bowl combine eggs, milk and orange rind. Add milk mixture to dry ingredients, stirring until just dampened. Fold in nuts and cranberries. Pour into greased and floured 9x5x3 inch loaf pan. Bake 1 hour at 350 degrees.

For each serving, spread with whipped cream cheese - add second slice and spoon on cranberry-orange relish.
