3 c. apples, cut up
2 c. shredded coconut
3 c. flour
3 eggs
2 c. sugar
1/2 c. chopped dates
1/2 c. raisins
1 1/2 c. oil
1 c. chopped walnuts
2 tsp. vanilla
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt

Mix sugar and eggs; beat well. Add oil; mix well. Add flour, cinnamon, soda, and salt; mix. Add dry fruit and nuts; mix well. Add apples; mix. Pour into greased tube pan. Bake 1 to 1 1/2 hours at 350 degrees.

This recipe can also be made in 3 loaf pans. I use the aluminum foil ones. It also freezes well.
