MINCEMEAT CAKE 
1 pkg. mincemeat (1 box)
2 tsp. baking soda
2 c. boiling water
2 c. sugar
2 eggs, well beaten
3/4 c. cooking oil
1 c. pecans
2 1/2 c. flour

Mix mincemeat and soda. Pour boiling water over and let cool. Mix nuts and flour together. Mix well beaten eggs, cooking oil and sugar together. Add to mincemeat. Stir well. Then add flour and nuts. Bake at 375 degrees in 9 inch pan 45 minutes or 1 1/2 hours at 350 degrees in loaf pan.

ICING FOR MINCEMEAT CAKE:

1 c. Pet milk
1 c. sugar
2 egg yolks, beaten
1 stick butter

Cook until thick. Add 1 cup chopped nuts and 1 cup coconut.
