MEXICAN FIESTA CASSEROLE | |
1 lb. ground beef 1/2 c. chopped onions 1 (16 oz.) can whole tomatoes, plus liquid 1 (8 oz.) can tomato sauce 1 env. chili sauce mix (omit if not on hand) 1 (15 oz.) can red kidney beans, drained 1 (12 oz.) can whole kernel corn 1 c. chopped black olives 1 c. shredded cheddar cheese 1 pkg. corn or tortilla chips Brown beef and onions in large skillet. Add remaining ingredients except cheese and chips, and simmer 5 minutes. In a 2 quart casserole alternate layers of meat mixture and corn chips making several layers. Sprinkle cheese on top. Bake at 400 degrees for 15-20 minutes. |
