BAKED STUFFED SHRIMP 
1 lb. jumbo shrimp
1-2 tbsp. lemon juice
2 tsp. sherry or white wine (optional)
1 c. fine bread crumbs or crackers
1-2 tbsp. grated Parmesan cheese
1/2 c. melted butter
1/2 tsp. salt

Remove all of shrimp except last joint and tail. Brush shrimp with a little melted butter. Arrange in a shallow baking pan/dish. Place in a 325 degree oven for 3 to 4 minutes--no longer. Remove and top with stuffing made from mixing bread crumbs, cheese, butter, lemon juice, wine and salt. Return to 325 degree oven and bake for 25 to 30 minutes. Do not overcook.
