8 med. to lg. beets (rinse, do not peel) with roots & 1/2" stem
3-4 tbsp. butter
Finely slivered orange peel
1/4-1/3 c. orange juice

Preheat oven to 400 degrees. Line pan with foil. Arrange beets. Cover and bake 1 hour. When cool rub skin away and remove stem and root. Slice thickly. Melt butter. Add orange peel. Cook 1-2 minutes. Add juice and cook 1-2 minutes. Stir in beets and heat well.
