BAKED GERMAN POTATO SALAD | |
8 med. potatoes 6 slices bacon 1/4 c. chopped onion 1/2 c. vinegar 1/4 c. water 1 tbsp. sugar 1 tbsp. flour 1 tsp. salt 1/8 tsp. pepper 1 tbsp. chopped parsley Cook potatoes with skins on until done, but firm. Cool, then peel and dice. Cut bacon into 1/2-inch pieces and fry to medium crisp. Remove bacon from grease and set aside. Add chopped onion to bacon grease and cook 1 minute. Blend in flour, sugar, salt and pepper. Add vinegar and water. Pour over diced potatoes. Add bacon and parsley; toss to mix. Bake at 350 degrees for 1 hour. |
