BAKED GERMAN POTATO SALAD 
8 to 10 cubed potatoes, cooked
3/4 c. bacon, diced and cooked
1 c. chopped celery
1 c. chopped onion
3 tbsp. flour
2/3 c. vinegar
1 1/3 c. water
2/3 c. sugar
3 tsp. salt
1/8 tsp. pepper

Cook bacon, reserve 1/4 cup fat. Add celery and onions to 1/4 cup fat and cook 2 to 3 minutes. Blend in flour. Stir in water and vinegar. Cook until thick and bubbly. Stir in salt and pepper. Pour mixture over potatoes and bacon in casserole dish. Mix lightly. Cover, bake at 350 degrees for 30 to 40 minutes.
