CRAB AU GRATIN 
4 tbsp. butter
1 onion, finely chopped
4 tbsp. flour
2 c. hot milk
1/2 c. grated sharp cheese
3 drops Tabasco sauce
1 tbsp. Worcestershire sauce
Salt & pepper to taste
1/2 c. mushrooms, sauteed in butter
1/4 c. chablis
1 lb. lump crab meat
Buttered bread crumbs

In a 2 quart saucepan, melt butter and saute onion until limp. Add flour and stir for 2 minutes. Add hot milk all at once and stir until boiling. Add remaining ingredients, except crumbs. Pour into a greased 2 quart casserole and top with bread crumbs. Bake at 350 degrees for 30 minutes. Good served with rice.
