ZUCCHINI BREAD 
3 eggs
2 c. sugar
3 tsp. vanilla
1 c. Crisco oil
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 c. flour
2 c. peeled & grated zucchini

Combine all ingredients and mix well. Pour into two greased loaf pans. Bake at 325 degrees for 45-55 minutes.
