ZUCCHINI CAKE 
3 c. sugar
3 c. grated zucchini
1/2 c. oil
4 eggs or Eggbeater equivalent
2 tbsp. wheat germ (optional)
2 tsp. cinnamon
1 tbsp. baking powder
3 c. flour
1/2 c. chopped nuts

Combine sugar, squash, oil and eggs. Combine dry ingredients. Mix together. bake at 300 degrees for 1 1/2 hours. Cool and frost.

FROSTING:

1/4 lb. (1 stick) butter, softened
1 (3 oz.) pkg. cream cheese, softened
1 tsp. vanilla
2-3 c. powdered sugar

Cream together all ingredients and put in cooled cake. Especially good on zucchini, raw apple, and banana cakes.
