CINNAMON POTATO PANCAKES 
6 med. potatoes, peeled
1 egg
1 onion, chopped
3 tbsp. all-purpose flour
1 tsp. salt
Dash of pepper
1/4 tsp. ground cinnamon
Butter, butter or oil for frying

Shred or grind the potatoes in food processor or grinder. Wash with water, drain well. In bowl mix together potatoes, egg, onion, flour, salt and pepper. Add cinnamon. In large, heavy skillet melt butter over medium heat. Make sure it's hot before you begin to fry. Use about 2 tablespoons of batter for each pancake. Cook until golden brown on both sides. Serve with plain yogurt, applesauce or sour cream.
