SPANISH RICE 
2 c. raw rice
1 lb. bacon, diced
1 med. onion, diced
2 med. green peppers, diced
1 lg. can tomato juice
Salt and pepper to taste

Put rice in greased 2 quart casserole dish. Set aside. Fry bacon in skillet until crisp (not burned). Add bacon to rice. In bacon grease put diced onions and peppers and cook until tender (not brown). Add to rice and bacon mixture; mix lightly and cover with tomato juice. Salt and pepper to taste. Cover and bake at 350 degrees for 1 1/2 hours. Stir every 20 to 30 minutes and add more tomato juice if needed. Should be slightly moist.
