CHRISTMAS PICKLES | |
Large cucumbers 2 c. lime or 3 tbsp. alum Water 1 c. vinegar 1 tbsp. alum 1 bottle red food coloring 2 c. vinegar 9 oz. red cinnamon candies "red hots" 18 c. sugar 1 box cinnamon sticks Peel cucumbers. Cut in half crosswise. With a spoon, clean out all seeds. Cut across into cucumber rings, enough to make 2 gallons. Soak for 24 hours in lime water or alum. (2 cups lime or 3 tablespoons alum and enough water to cover cucumbers.) After 24 hours wash off lime or alum then soak in cold water for 3 hours. Drain off water. Add 1 cup vinegar, 2 tablespoons alum, red food coloring and enough water to cover cucumber rings. Put in large pot and simmer 2 hours. Drain and add 2 cups vinegar, red hot cinnamon candy, sugar and cinnamon sticks. Put in large kettle and bring to a boil. Place in pint jars, then fill with the hot liquid. Seal at once. Makes 14 pints. |
