In a large bowl grate 9 peeled potatoes. Use a strainer to remove starch. Grate 1 large onion into mixture. Grate a 10th potato over the onion. Stir. Sift 1/2 cup flour over mixture. Add salt to taste. Stir. Cut 1 pound bacon, rind removed, in half and slice 1/2 inch thick. Then cube it and fry until brown. Pour bacon and grease into potato mixture. Put in a deep baking dish and bake at 350 degrees for 1 hour or more. Can be eaten separately or used for stuffing fowl. |
