CHOCOLATE MINT MELTAWAYS 
10 oz. mint chocolate chips
3/4 c. butter, softened
1/2 c. confectioner's sugar
1 egg yolk
1 1/4 c. flour
1/2 c. reserved mint chips
1 1/2 tbsp. shortening
2 tbsp. chopped toasted almonds

Preheat oven to 350 degrees. Melt in microwave 1 cup chips; stir until smooth. Set aside. In large bowl, combine butter, confectioner's sugar, and egg yolk; beat until creamy. Add melted morsels and flour; beat until well blended. Drop by heaping teaspoonfuls onto ungreased cookie sheets. Bake for 8-10 minutes. Allow to stand 3 minutes before removing from cookie sheets. Cool completely.

GLAZE:

Melt 1/2 cup chips and vegetable shortening in microwave. Stir until morsels are melted and mixture is smooth. Drizzle each cookie with 1/2 teaspoon glaze; sprinkle with almonds. Chill until set. Store in airtight container in refrigerator. Makes about 2 dozen cookies.

Since microwave ovens vary in power, you may need to adjust your cooking time.
