BRUNCH CASSEROLE 
Seasoned croutons to cover 9x13 pan
1 1/2 lbs. sausage, cooked and crumbled
2 c. shredded Cheddar cheese
10 eggs, slightly beaten
2 c. milk
1 can mushroom soup
1/4 c. chopped onion
1/2 c. chopped green pepper
Sm. can sliced mushrooms

Spread crumbled sausage over croutons in the bottom of 9x13 pan. Sprinkle 1/2 cup cheese over sausage. Mix eggs, milk, mushroom soup, onion, green pepper and mushrooms. Pour over sausage and cheese. Top with remaining cheese. Cover with foil and refrigerate overnight. Uncover and bake 45-60 minutes at 350 degrees.
