16 lbs. cucumbers
Soak cucumbers for SIX DAYS in salt water that will float an egg. 7TH DAY: drain, cover with boiling water and let stand overnight. 8TH DAY: drain, quarter, and add 2 ounces pulverized alum to boiling water. Cover with grape leaves and let stand overnight. 9TH DAY: drain, cover with boiling water and let stand overnight. 10TH DAY: boil 3 quarts vinegar, 2 ounces stick cinnamon, 1/2 ounce celery seed and 8 pounds sugar. Pour over cucumbers overnight. 11TH DAY: reheat vinegar mixture, pour, let stand overnight. 12TH DAY: heat and seal.
