MOLASSES WHOOPIE PIES 
1 c. sugar
1 c. shortening
1 tsp. salt
2 eggs
1 c. molasses
1 c. hot, strong coffee
1 tsp. vinegar
4 1/2 c. flour
1 tsp. cinnamon
1 tsp. ground ginger
2 tsp. baking soda

Combine and cream sugar, shortening and salt. Add eggs, molasses, and vinegar and mix thoroughly. In separate bowl, sift together flour, cinnamon and ginger, and stir into batter. Dissolve baking soda in hot coffee and add to remaining ingredients. Drop by teaspoonful onto a greased cookie sheet and bake 15 minutes at 350 degrees. Cool and fill with marshmallow filling.

MARSHMALLOW FILLING:

1/2 c. shortening
4 tbsp. marshmallow fluff
1 c. powdered sugar
Milk

Combine all ingredients and beat thoroughly; add just enough milk to make frosting spreadable.
