8-INCH LEMON CHEESE PIE 
9 oz. cream cheese
2 tbsp. butter
1/2 c. sugar
1 egg
2 tbsp. flour
2/3 c. warm milk
1/4 c. fresh lemon juice
2 tbsp. grated lemon peel
1 1/2 c. cookie crumbs
6 tbsp. melted butter
(3 tbsp. 10X sugar with graham crackers)

Line pie pan with crumb mixture. Save some to sprinkle on top. Cream cheese and butter. Add sugar and egg. Add milk slowly to flour and add this to cream cheese mix. Add juice and rind. Pour into crust. Bake 45-50 minutes at 325 degrees.
