MICROWAVE PEANUT BRITTLE 
1 1/2 c. raw peanuts (skins on)
1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In microwave safe container (1 1/2 quart), add peanuts, sugar, syrup and salt. Stir. Cook 4 minutes on high. Stop. Stir well. Cook 4 minutes on high. Stop. Stir in butter. Cook 2 minutes more on high. Stir in vanilla. Add baking soda, quickly stir until foamy and pour onto greased surface. Spread about 1/4 inch thick. Cool. Break into pieces. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
