GREEN CORN TAMALES 
5 lb. frozen masa, thawed
4 c. grated Cheddar cheese
2 (4 oz.) cans chopped green chilies
1 lb. lard
2 c. sugar
8 c. corn kernels (fresh is best)

Mix all ingredients together at room temperature. Wrap in corn shunks. Can be stored in plastic bags in the freezer. Cooking directions. Steam in a double boiler (calender type) for 1 hour or until wrapper doesn't stick.
