GUAMANIAN CHICKEN 
1 c. soy sauce
Juice of 4 lemons or limes
1/4 c. vinegar
6 finely chopped green onions (tops and bottoms)
Tabasco sauce to taste
3 lbs. chicken, cut up

Mix soy sauce, lemon juice, vinegar, onions, and Tabasco in a large bowl. Cut up chicken and place in bowl with marinade. Let stand anywhere from 2 hours to overnight before cooking. After soaking, let most of liquid drain off meat and save sauce. Meat is best charcoal grilled on a barbecue pit. Great served with white rice and green peas. Sauce is great poured over rice.
