SAUSAGE PANCAKES | |
2 pkg. (8 oz. each) fully cooked brown and serve link sausages 1 can (21 oz.) apple pie filling 2 c. variety baking mix 1 egg 1 1/2 c. milk butter Heat griddle over medium heat or heat electric griddle to 375 degrees. (To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.) Heat the sausages as directed on the package. Heat the pie filling in 1-quart saucepan over low heat. Keep the sausages and pie filling warm over very low heat while you make the pancakes. Grease the hot griddle with shortening if necessary. Make pancakes as directed for Thinner Pancakes on baking mix package - except after mixing, for each pancake pour 1/4 cup batter in an oval shape (about 5 inches long and 3 inches wide) onto the hot griddle. Finish as directed on the package. Spread each pancake with butter. Wrap each pancake around a hot sausage. Put folded side down on plate. Top with a spoonful of the hot pie filling. About 18 pancakes. |
