RABBIT-POTATO SALAD | |
2 c. cooked rabbit, coarsely cut 1/4 c. chopped sweet pickles 1/2 c. chopped celery 1 tbsp. chopped onion 1/2 c. diced cooked potatoes 1/2 tsp. salt 1 tbsp. liquid from sweet pickles 1/2 tbsp. lemon juice 1/4 c. mayonnaise or other thick dressing Mix first 6 ingredients lightly, but thoroughly. Blend pickle juice, lemon juice, and dressing together, then mix with other ingredients. Chill for about 1 hour to blend flavors. Serves 4. |
