HUSHPUPPIES 
1 large egg, well beaten
1 c. buttermilk
1 medium onion, chopped fine
1 1/2 c. self-rising cornmeal mix
1/2 c. self-rising flour

Mix together all ingredients just before the hushpuppies are to be cooked. Drop by tablespoonful into 350°F oil. As long as they are not touching, hushpuppies will turn over by themselves. If they need help, flip with a spoon once, and drain on paper.

Makes about 20 hushpuppies.
