PEPPERED BARBECUED FILLET OF BEEF | |
1 fillet of beef (3-4 lbs., trimmed) 1 1/2 tsp. cracked black pepper 1 tsp. onion powder 1 tsp. garlic powder 1 tsp. ground red pepper 1/2 tsp. dried thyme leaves 1/2 tsp. dried oregano Light charcoal or heat oven to 450 degrees. Fold end of fillet under and secure with twine. Combine black pepper and remaining ingredients and rub into fillet. When coals are hot, grill the meat about 20 minutes turning so meat browns evenly. Or roast in oven 5 minutes. Reduce meat to 375 degrees and roast 20 minutes more for medium-rare. Remove from grill or oven. Remove twine. Slice. Serves 8-12. |
