HOT CHICKEN (OR SEAFOOD) SALAD 
2 c. cooked, diced chicken (or shrimp or crab meat)
1 c. thinly sliced celery
1/2 c. cashews
1/2 tsp. salt
1 onion, very finely chopped
1 c. mayonnaise
2 tbsp. lemon juice
1/2 c. shredded Cheddar cheese
1 c. crushed potato chips

Combine all ingredients except cheese and potato chips. Put lightly into casserole. Sprinkle with cheese and chips. Bake at 400 degrees until heated thoroughly. 6 servings.
