3 c. water (110 - 120 degrees F.) 3/8 c. sugar or honey 2 pkgs. active dry yeast 9-10 c. ENRICHED FLOUR 1/2 c. potato flakes Water (according to pkg. direction) 1/2 c. vegetable oil 2 1/3 tbsp. salt Combine water, sugar or honey, yeast and let rise. Mix potato flakes according to package directions. Combine with oil and salt. Mix well and add to sponge. Add enough remaining flour to make a soft yet manageable dough. Knead until dough is smooth and elastic. Cover and let rise until double, punch down. Shape into loaves. Place in pans and let rise until doubled. DO NOT OVERRISE. Bake at 400 degrees F. 30-35 minutes. Remove from pans immediately and brush tops with butter. |
