NEW YORK CHEESE CAKE 
1 1/2 lbs. Ricotta cheese
1 lb. cream cheese
1 1/2 c. sugar
6 eggs
1 pt. sour cream
6 tbsp. flour
1 tsp. vanilla
1 1/2 tbsp. lemon juice
1 tbsp. lemon rind
Cinnamon

Soften cheese and beat together until fluffy. Beat in sugar, then eggs (one at a time). Beat in flour, vanilla and sour cream, mixing well. Finally, beat in lemon juice and rind.

Pour mixture into a buttered springform pan. Bake at 350 degrees for 80 minutes. Test with knife to see if cooking is complete. Turn off heat and allow to cool in oven. Sprinkle with cinnamon.
