CHICKEN ENCHILADAS 
3 boneless chicken breasts
Sauteed onions
Green chilies
Cooking sherry
1 pt. sour cream
Cream of chicken soup
1 pkg. sharp cheddar, grated
1 pkg. Mozzarella, grated

Boil chicken breasts 20 minutes. Saute onion, mix chilies and sherry. Mix sour cream with chicken soup, put some in with chicken/chili mixture. Cover with soup/sour cream and cheese. Bake 25 minutes at 350 degrees.
