BREAKFAST PUFFS 
1/3 cup butter
1/2 cup sugar
1 egg
1/2 cup milk
1 1/2 cups all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/3 tsp. nutmeg

Spray a 12 muffin pan with non-stick spray or brush with melted butter. Alternatively, muffin papers may be used.

Combine butter, sugar, and egg. Mix together flour, baking powder, salt, cinnamon and nutmeg.

Add flour mixture alternately with milk. Stir with a spoon; do not overmix.

Bake in a preheated 350°F oven for 20 minutes; remove from muffin pan.

Roll in topping while still warm.

Topping:

2 tbsp. melted butter
1/2 cup sugar white or turbinado sugar
1 tsp. cinnamon

Alternately, the muffins may be drizzled with confectioners icing.

Variation: Apple muffins - 1 cup chunked apples, simmered in a syrup of 1/2 cup sugar and 1/2 cup water until tender, then drained may be added directly to batter. A chunk of fresh ginger can be simmered with the apples for extra flavor.
